Don’t just throw bones into the pot, add one more ingredient for a delicious and flavorful broth
The bone stewing process takes quite a long time, making women feel impatient. However, it is not simple to have a flavorful and clear broth. If you simply place the bones on the stove and boil, the bones may become soft but the broth will be cloudy and smelly.
How to stew the bones to make them tender and the broth clear
There are many types of pork bones that can be used to make delicious and sweet broth, such as rib bones, leg bones, pig head bones, pig trotters, young bones,… Among them, people often use leg bones, tail bones of beef/pork, and chicken breast bones as the 3 most popular types of bones for stewing broth when cooking dishes that require a lot of broth such as noodles, pho, hu tieu, hotpot, soup,…
You should choose fresh, new, delicious bones that still have the natural meat fragrance. Avoid buying frozen bones with unknown origin, poor quality, and lack of hygiene. You can go to wholesale markets or get bones right after they are slaughtered.
Boil the bone broth with high heat until it boils, then turn the heat down. During the stewing process, you should not cover the pot as it will make the bone broth cloudy. Keep the heat at the lowest level to help the bones release their sweetness completely. At the same time, you need to skim off the foam regularly to make the broth clearer.
Put a roasted purple onion into the stewing pot to make the bone broth clearer. When stewing, add half a green papaya to the pot to make the bones tender quickly and the broth has a sweeter and clearer taste.
Other notes during the bone stewing process
– The stewing time for the bones should be at least 1 hour. Avoid stewing the bones beyond the allowed time as it will make the broth sour and cloudy. However, you need to observe until the meat clinging to the bones becomes tender, then stop. This is the time when the broth is most delicious.
Each type of bone will have a different stewing time. For chicken bones and pork bones, do not stew for more than 6 hours, for beef bones, do not stew for more than 10 hours, for seafood, do not stew for more than 45 minutes.
– Add a roasted purple onion into the bone broth to make the broth more flavorful.
– Instead of seasoning with broth powder, which can make the broth cloudy, you can use salt.
– Using various types of vegetables will make the broth naturally sweeter compared to using broth powder.
Stewing pork bones for 1 hour is enough to make the bones tender and can be eaten again. Continue stewing for 1 more hour if you want to eat the bones that have been stewed, but if you only want to use the broth, you can stew for about 2 hours.
